We recently embarked on an exciting culinary adventure, participating in a special challenge hosted by The Motherhood and Kellogg’s Rice Krispies. As a long-time fan (my husband’s absolute favorite cereal!), joining this creative endeavor felt like a natural fit. Our mission? To craft a show-stopping, “Krispie-licious” dessert that would embody the spirit of Easter, combining playful designs with refreshing flavors.

The Sweet Challenge: Crafting Spring Delights with Rice Krispies
This year, my team of four dedicated bloggers is up against three other talented groups in a series of seasonal challenges. Each season, we gather to brainstorm and create a unique, festive treat that aligns with a specific theme. Beyond the delectable edibles, we’re also tasked with designing an accompanying centerpiece that elevates the entire presentation. Embracing the Easter Theme: Playfulness and New Beginnings
Our inaugural challenge revolved around the joyful theme of Easter. We dedicated ourselves to experimenting with Rice Krispies, meticulously tasting and refining countless practice recipes until we achieved perfection. Our goal was simple: an easy-to-make, utterly delicious, and irresistibly cute creation that would enchant both children and adults! It was a labor of love, a delicious marathon of marshmallows and cereal, but someone had to ensure every bite was just right. We poured our hearts into developing a treat that truly captured the essence of springtime celebrations.

With our chosen treat and centerpiece, we aimed to encapsulate both the playful whimsy of Easter and the profound symbolism of rebirth and fresh beginnings that spring represents. Imagine a charming Cocoa Krispies garden, brimming with delightful edible carrots, miniature onions, and sweet cabbage. This idyllic scene was strategically placed right next to a burrow of mischievous, bouncing bunnies made from Rice Krispies. It was a delightful, albeit unlucky, scenario for our sweet “veggies” as these hungry bunnies looked ready to pounce!

While my children didn’t get to join in on the treat-making process on this particular day due to the competitive nature of the challenge, this recipe is absolutely ideal for a fun Easter project with little ones. The construction of our festive basket, filled with yummy Cocoa Krispies Treats and adorned with shredded coconut to mimic grass, miniature edible vegetables, and, of course, our adorable Lemonade Rice Krispies bunnies and chicks, was straightforward enough for them to manage. It’s an activity that sparks creativity, encourages hands-on learning, and most importantly, yields delightful results and cherished family memories.

Easter Rice Krispies Chicks in Nests Recipe

Ingredients
For the Lemon Rice Krispies Treats (Chicks):
- 3 tablespoons butter or margarine
- 4 cups miniature marshmallows
- 6 cups Rice Krispies® cereal
- 1/2 cup white chocolate chips
- 1 1/2 teaspoons lemon zest (not compressed, from about 2 large lemons)
For the Chicks Decoration:
- 1 recipe Lemonade Rice Krispies® Treats (prepared above)
- 8 ounces yellow candy melts, melted
- 14 ounces sweetened flake coconut
- 1 cup chocolate chips, melted (for eyes)
- 4 ounces orange candy melts, melted (for beaks)
For the Nest Cookies (Cocoa Krispies Nests):
- 4 sticks unsalted butter, softened
- 1 1/3 cups sugar
- 1 3/4 teaspoons vanilla extract
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- 3 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 1/2 cups shredded coconut
- 1 1/2 cups Rice Krispies® cereal
- 1 1/2 cups Cocoa Krispies® cereal
- Sea salt, for sprinkling
Instructions
Part 1: Crafting the Lemon Rice Krispies Treats for Chicks
- In a large saucepan, melt 3 tablespoons of butter or margarine over low heat. Once melted, add 4 cups of miniature marshmallows and stir continuously until they are completely melted and smooth. Remove the pan from the heat.
- Stir in 1/2 cup of white chocolate chips and 1 1/2 teaspoons of fresh lemon zest into the warm marshmallow mixture until thoroughly combined. The lemon zest adds a bright, zesty aroma and flavor, perfectly complementing the sweetness.
- Gently fold in 6 cups of Rice Krispies® cereal. Stir until all the cereal pieces are evenly coated with the delightful lemon-marshmallow mixture. Work quickly before it sets too much.
- Prepare a 13×9-inch pan or a large cookie sheet by spraying it and a spatula with non-stick cooking spray. Pour the Lemonade Rice Krispies® mixture into the prepared pan and spread it evenly with the spatula. Allow the mixture to cool completely at room temperature or chill briefly in the refrigerator to firm up.
Part 2: Bringing Your Chicks to Life
- Once the Lemonade Rice Krispies® Treat mixture has cooled and set, take approximately 1 tablespoon of the mixture and gently form it into a small, elongated egg shape, which will be the body of your chick. Repeat for all chicks.
- Melt 8 ounces of yellow candy melts according to package instructions (typically in a microwave or double boiler). Dip each formed Rice Krispies treat chick into the melted yellow candy, ensuring it’s fully coated.
- Immediately after dipping, roll the coated treat in sweetened flake coconut. The coconut flakes will adhere to the candy coating, giving your chicks a wonderfully soft and feathery texture. Place each finished chick onto a large piece of parchment paper to dry and set.
- Melt 1 cup of chocolate chips for the eyes. Using a piping bag with a very fine tip or a simple toothpick dipped into the melted chocolate, carefully pipe two small dots onto each chick to create adorable eyes.
- Melt 4 ounces of orange candy melts for the beaks. Again, using a fine piping tip or a toothpick, pipe small, triangular beaks onto each chick. Return them to the parchment paper to allow all the decorative details to dry and harden completely.
Part 3: Baking the Irresistible Cocoa Krispies Nests
- Preheat your oven to 350 degrees F (175 degrees C). Prepare your baking sheets by lining them with parchment paper.
- In a large mixing bowl, cream together 4 sticks of softened unsalted butter, 1 1/3 cups of granulated sugar, and 1 3/4 teaspoons of vanilla extract using an electric mixer until the mixture is light and fluffy. This step incorporates air, making the cookies tender.
- In a separate medium bowl, whisk together 3/4 teaspoon of salt, 1 teaspoon of baking powder, 3 3/4 cups of all-purpose flour, and 3/4 cup of cocoa powder. Ensure all dry ingredients are well combined to prevent lumps.
- With the electric mixer on low speed, slowly add the dry flour mixture to the butter mixture, mixing until just combined. Be careful not to overmix the dough, as this can lead to tough cookies. Once the dough begins to come together, gently fold in 1 1/2 cups of shredded coconut.
- In a shallow dish or pie pan, mix 1 1/2 cups of plain Rice Krispies® cereal and 1 1/2 cups of Cocoa Krispies® cereal together. This will be the crunchy coating for your nests.
- Scoop the chocolate cookie dough into approximately 3-tablespoon sized balls. For best results, use a cookie scoop for uniform size.
- Roll each dough ball generously in the Rice Krispies and Cocoa Krispies mixture, pressing the cereal onto all sides to ensure they are completely covered. This step is crucial for creating the authentic “nest” texture and adds a delightful crunch.
- Place the cereal-coated dough balls onto the prepared baking sheets, ensuring they are spaced about 2 inches apart to allow for spreading.
- Using your thumb or the back of a rounded spoon, press a deep indentation into the center of each dough ball. This creates the perfect cavity for your little chick, leaving the sides high to mimic a bird’s nest.
- Bake for 17-19 minutes, or until the edges are lightly set and the cookies are fragrant. The precise baking time may vary slightly depending on your oven.
- As soon as the cookies come out of the oven, immediately sprinkle them with a scant amount of sea salt. This enhances the rich chocolate flavor of the nests. Allow the cookies to cool on the baking sheet for several minutes to firm up before carefully transferring them to a wire rack to cool completely.
Serving Suggestion:
Once both the Lemonade Rice Krispies Chicks and the Cocoa Krispies Nests are completely cooled and set, gently place one adorable chick into the center of each nest cookie.
