There’s nothing quite like basking in the golden sun and savoring the season’s generous bounty. And what better way to do that than with a batch of bright, flavorful cupcakes?

A Journey to the Heart of Dairy Farming with Land O’Lakes
My summer adventures began with an unforgettable trip to Minnesota, where I had the privilege of visiting a dairy farm with my wonderful friends at Land O’Lakes. Land O’Lakes graciously extended an invitation for me to meet one of their esteemed co-op farm families: Sadie and Glen from Blue Diamond Dairy, along with their incredibly sweet children. This experience offered a profound insight into the dedication behind the dairy products we love.
Sadie and Glen embody the heart of American farming. They are devoted parents, tireless farmers, and Sadie is even a fellow blogger, sharing her life and experiences with a wider audience. Both pour countless hours into their passion, working diligently to support their family and raise their children on a vibrant, working farm. Their commitment to their craft and their land is truly inspiring, highlighting the hard work that goes into every carton of milk and stick of butter.

Learning the Ropes: Milking Cows and Friendly Faces
During our visit, Glen and Sadie were incredible hosts, patiently teaching us the intricate art of milking cows – both by hand and with modern milking pumps. This hands-on lesson was an eye-opener, revealing the skill and precision involved in daily dairy operations. Following our insightful instruction, we even held a friendly hand-milking competition. As expected, the formidable Ree Drummond, The Pioneer Woman, truly excelled, leaving us all in awe of her unexpected talent. I, however, managed to hold my own!

We ventured out to the expansive pastures of Blue Diamond Dairy, observing where the cows graze and enjoy the warmer Minnesota months. It was there we met Helen, a truly unforgettable bovine. With her gentle demeanor and curious nature, Helen quickly became the star of our visit, approaching us with remarkable friendliness and a desire for interaction.

Here she is, graciously coming forward to greet us, embodying the gentle spirit of the farm. Helen proved to be quite the affectionate creature, showering us with delightful cow kisses. Jessica The Novice Chef even captured an amazing photograph of Helen bestowing a sweet smooch upon Maria’s baby. These interactions were a beautiful reminder of the deep connection between farmers and their animals.

Pink Lemonade Cupcakes

Ingredients
For the Pink Lemonade Cupcakes:
- 3/4 cup Land O Lakes® Salted Butter softened (3 Half Sticks)
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 teaspoons baking powder
- 4 Meyer lemons 2 heaping tablespoons zest + 1/2 cup juice
- 2 1/2 cups all-purpose flour
- 3/4 cup whole milk
- 3 to 5 drops red food coloring
For the Pink Lemonade Frosting:
- 1 1/2 cups Land O Lakes® Salted Butter softened (6 Half Sticks)
- 8 ounces cream cheese softened
- 6-8 cups powdered sugar
- 1 Meyer lemon zest + 3 tablespoons juice
- 2 -3 drops red food coloring
- Pink Sprinkles
- 24 lemon jelly candy wedges
Instructions

Preheat the oven to 350 degrees F. Line two large muffin pans with 24 paper liners. Place 3 softened Land O Lakes® Salted Butter Half Sticks in the bowl of an electric mixer. Add the sugar and beat until light and fluffy, 3 to 4 minutes. Scrape the bowl and add the eggs, vanilla extract, and baking powder. Beat to combine.

Add the lemon zest and juice to the bowl. Turn the mixer on low and slowly add the flour and milk until just combined. Scrape the bowl again and turn on low while adding 3 to 5 drops of red food coloring, creating a pale pink color.

Divide the batter evenly between 24 cupcake liners. Bake for 15 to 20 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Cool in the muffin pans for 10 minutes before moving to a cooling rack.

Once the cupcakes are completely cool, make the frosting. Place the softened butter and cream cheese in a clean bowl. Cream with the mixer on high until very smooth with no clumps. Scrape the bowl, then add the lemon zest and juice. Turn the mixer on low and slowly add the powdered sugar until your desired consistency is reached. Add 2 to 3 drops of red food coloring to create a pale pink color.

Place the frosting in a large piping bag with wide piping tip. Pipe large mounds of frosting on top of each cupcake. Then cover with pink sprinkles and top with a lemon jelly candy.
